Taiwanese Beef Noodle Soup 老爺心目中的台灣=牛肉麵!!!

If you want me to indicate one most popular dish that can represent Taiwanese food, I would say the beef noodle soup. It is so common but has so many varieties that pretty much every Taiwanese loves it.

This is also one of Mr. Big’s favorite dish, his impression of Taiwan since his childhood. Whenever he’s away from home for a while, the top-of-mind cuisine that he wants from me is this spicy beef stew.

He will be coming home soon from a one-month training. I just spent a couple hours in the kitchen making this beef stew yesterday and let the meat sit in the broth overnight to soak in all the flavors. Today would be the perfect timing to serve this warm comfort food to welcome my man home. 🙂

French Onion Soup 法式洋蔥湯

The French onion soup contains very simple ingredients but needs your time and patient to slowly cook out the flavors to have a good balance of salty and sweetness.

The most time consuming part and the key to make the soup taste good is to caramelize onion for about 45 mins to 1 hour. You need to be careful not to burn the onion but still keep it slowly cooked till lightly brown before you add any liquid into the soup.

Chinese mushroom chicken rice soup 香菇雞蓉粥

This is a very simple, nutritious dish; aka, another comfort food especially great for late nights. If you have a rice cooker or slow cooker that don’t know when to use them, this is the time to let the machine help you out. 🙂 All you need to do is clean and chop all the ingredients and add them all into the rice cooker or slow cooker. One hour later, a great meal is ready for you!! I love the natural chicken stock that I made from rotisserie chicken bones instead of regular chicken stock from super market. The weather in Maryland is turning into dreary winter this week. Plus having been working over 11 hours for the past 2 days with more works the coming weekend, I decided this is the best time to have some comfort food at home.
