Guacamole is one of my favorite American-Mex appetizer. It’s so easy to make, but taste so good. I normally make salsa and guac the same time since it contains very similar ingredients. Chopping double the ingredients saves time and can have two different dip at the same time. Awesome!!
To make a good guac, you don’t need skills at all. Just mix all chopped ingredients together and adjust the taste to your preference. The guacamole could go with chip, wraps, or into sandwiches. The weather is getting warmer, and the spring is coming. This dish totally illustrates my impression of spring. A little bit of refreshing, savory, citrusy, and aromatic from the wine, the herbs, the shellfish, and the lemon juice. Adding a string of fresh thyme and the lemon zests really brings up the flavor to the next level.

Just to bare in mind the spinach would shrink rapidly after you boil them and especially after you squeeze out the water. I used one whole bag of spinach (about 10-12 heads) and turned out to be the small plate I shown in the picture (about 3 rolls.) I normally serve this cold as an appetizer or side dish. Therefore, you can prepare it ahead of time while you cook other dishes without worrying the dish turns cold.
