Pumpkin spiced pancakes 南瓜鬆餅

Got too many pumpkins for the holidays and don’t know what to do with them aside from pumpkin pies? This pumpkin spiced pancakes are quick and easy. Make your Sunday morning brunch a little different from the regular simple pancakes and they taste sooooo good.

There was some extra squash in my fridge for a while which I made some pie already and didn’t know what else I can make it for. This pumpkin pancakes just randomly popped up my mind one morning.

I had too much liquid and not enough mix at first so the first 2 pancakes are too flat. After adjusting the batter, it turned out really good!!! The measurements I had for the recipe is a rough estimate. I would suggest you try 1 or 2 before you have a pan full of pancakes.

Servings: 18-20 pancakes   Total Time: 40 minutes  Difficulty: easy

Ingredients:

  • 3 cups pumpkin puree (I used raw pumpkin chunks and water mix)
  • 4 cups Bisquick™ mix (or pancake mix)
  • 2 eggs
  • 2 tbsp vegetable oil
  • 4 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp natural vanilla extract
  • 1 pinch salt

Directions:

  1. Remove pumpkin seeds and pulp, peel and then cut in big chunks. Well blend the raw pumpkin with some water.Untitled
  2. In a large bowl, well mix the Bisquick, eggs, oil, sugar, and spices. Then pour in the pumpkin puree. The batter should be a little thick.UntitledUntitled
  3. Just like making regular pancakes. Heat up a pan in medium heat with 1 tbsp butter. Scoop a couple batter onto the pan. Flip when you see the batter starts to bubble. Fry the other side for another 1-2 minutes then ready to serve. UntitledUntitled

You can serve the pumpkin spiced pancakes with fresh fruits, whipped cream, and/ or maple syrup and honey. With a cup of freshly brewed coffee, what a perfect holiday breakfast!!!! 🙂

南瓜鬆餅

晚秋到入冬這段時間是美國的南瓜季節,到處都是各式各樣的南瓜,新鮮又便宜好吃。之前試做了南瓜派、南瓜湯、金瓜米粉,還剩了一點南瓜在冰箱,某天早上起床心血來潮想到,好像可以做南瓜鬆餅,不知道會不會成功,但想像中應該是對味的(?) 趕緊爬起床來嘗試看看。

因為是抱著實驗的精神試做看看的,一開始不知道比例應該怎麼調,所以剛開始做的麵糊太稀,頭兩個鬆餅軟趴趴的沒有澎起來小失敗。再多加一些鬆餅粉調整之後,做出來的鬆餅很成功,而且帶有一點南瓜跟香料的味道健康又好吃唷!! 懶得做南瓜派又想吃吃看南瓜甜點的人可以試試看,南瓜和香料與黑糖真的是絕配。

材料:

  • 3 杯南瓜泥 (我直接用生南瓜塊和水打成泥)
  • 4 杯鬆餅粉
  • 2 顆全蛋
  • 2 大匙蔬菜油
  • 4 大匙黑糖
  • 1 小匙肉桂粉
  • 1/2 小匙荳蔻粉
  • 1 小匙天然香草精
  • 1 小搓鹽

做法:

  1. 將南瓜去籽、削皮、切大塊,和一些水打成南瓜泥備用
  2. 在一個大碗中,將鬆餅粉、蛋、油、糖和香料攪拌均勻,之後拌入南瓜泥,稍微調整麵糊的濃度,應該是要有點濃稠
  3. 中火熱平底鍋,加入一大匙奶油,像煎一般鬆餅一樣,舀一大匙麵糊到平底鍋中,等到麵糊澎起冒小泡泡後翻面再煎 1-2 分鐘就可以起鍋了

煎好的鬆餅趁熱配上一些水果、鮮奶油、楓糖或蜂蜜都好好吃!! 再加上一杯現煮咖啡,完美的假日早餐~
