Stars and Stripes Pie 美國國旗派

Happy July 4t!!!

July is also the best season for all kinds of berries. Why not making a patriotic pie to celebrate the upcoming 4th of July long weekend? This pie looks great and fun but it’s so easy to make and taste awesome!! All you need is a cardboard and a small knife or star cookie cutter.

Just defrost your pre-made pie crusts and let’s get started!!

Servings: 9" pie x2   Total Time: 3.5 hrs    Difficulty: intermediate

Ingredients:

Pie Crust (3 portion) 
Strawberries Filling
  • 5 cups of strawberry hulled and quartered
  • Sugar 1 cup
  • Cornstarch 1/2 cup
  • Lemon juice 1 tbsp
  • Rum 2 tbsp
  • Balsamic vinegar 1 tbsp
Blueberries Filling
  • 2 cups of blueberries
  • Sugar 1/4 cup and 2 tbsp
  • Cornstarch 1/4 cup
  • Lemon juice 1 tsp
  • Rum 1 tbsp

Directions:

Pie Crust: Reference the Basic Pie Crust from scratch 基礎派皮食譜
  • Pre-bake 2 pie shells, cool and make ready
  • Roll another portion of pie crust. Cut the stars and stripes, then store in the fridge
Filling & Assembling Pies
  • Preheat oven to 375°F. In two large bowls, well mix all strawberry filling and blueberry filling ingredients together.

  • Prepare a hard cardboard. Cut to fit in a quarter of the pie shell.

  • Use the cardboard as a divider to pour in top-right quarter of blueberry filling and the rest with strawberry filling.

  • Place the stars and stripes on top, brush some egg wash. Then start baking for about 1 hour or until the filling is bubbling.

  • Prepare 2 sheets of parchment paper with a round cut in the middle. Check the pie crust after 30 mins and place the paper on top to prevent the crust to burn.

Cool the pie completely before serving.

 美國國旗派

這週末是7月4號,美國國慶日,拿出事先做好的冷凍派皮麵糰,稍微解凍就可以輕鬆完成一個應景、美觀、又好吃的美國國旗派唷!!

材料:

派皮 (3 份麵糰): 參考 Basic Pie Crust from scratch 基礎派皮食譜
草莓派餡
  • 5 杯新鮮草莓,去蒂切成四分之一小塊
  • 糖 1 杯
  • 玉米粉 1/2 杯
  • 新鮮檸檬汁 1 大匙
  • 蘭姆酒 2 大匙
  • 義大利紅酒醋 1 大匙
藍莓派餡
  • 2 杯新鮮藍莓
  • 糖 1/4 杯又 2 大匙
  • 玉米粉 1/4 杯
  • 新鮮檸檬汁 1 小匙
  • 蘭姆酒 1 大匙

做法:

派皮: 做法請參考 Basic Pie Crust from scratch 基礎派皮食譜
  • 兩份 9吋派皮,先烤好放涼備用
  • 另外一份麵糰擀平,切好小星形以及許多長條派皮,冷藏備用
派餡與組合
  1. 預熱烤箱 375°F。在兩個大碗中,分別將草莓派餡與藍莓派餡材料均勻混合。
  2. 準備厚紙板,折成直角才剪成剛好將派分成四分之一的大小。
  3. 將厚紙板放好當作分隔板 (最好有另外一個人幫忙扶好),在左上角的四分之一填入藍莓餡,另外的四分之三放入草莓餡
  4. 在藍莓餡上擺上切好的星星派皮,草莓餡上擺好長條派皮,在星星和長條派皮上均勻塗上一層蛋液後,送進預熱好的烤箱烤約 1 小時,或直到中間的派餡起泡
  5. 準備兩大張烤盤紙,中間剪一個圓,讓派餡剛好露出來,烤 30 分鐘後如果怕邊邊派皮烤焦,可以蓋上烤盤紙繼續烤
  6. 等烤好出爐,放涼後就可以吃囉!!!

現在正是美國各種莓果盛產的季節,新鮮的水果做成的派酸酸甜甜,好好吃!!!
