Sweet Potato Frosting Cupcake 地瓜泥杯子蛋糕

We just had our first snow for this year a couple days ago. Looking at the snow outside of the window inspired me for this dessert idea. The toasted marshmallow looks so cute and so much like the snow on the treetop.

I like my cupcakes serve warm. The sweet potato frosting mixes in the crunchy texture of toasted pecan and marshmallow combining with the soft and moist cakes taste like heaven!!


Servings: 22 cupcakes   Time: 1.5 hour  Difficulty: intermediate


  • Sweet potato 4-5
  • Brown sugar 1/2 cup
  • Unsalted butter 1 tbsp
  • Heavy cream 2 tbsp
  • Ground cinnamon 1 tsp
  • Ground nutmeg 1/2 tsp
  • Salt 1 pinch
  • French vanilla cake mix 1 box
  • 3 large eggs
  • Water 1 cup
  • Vegetable oil 1/2 cup
  • Pecan and mini marshmallow for garnish


  1.   Steam or roast peeled sweet potatoes until soft.  Mash the sweet potatoes and mix in the butter, cream, spices, sugar, and salt while warm. Well whisk the sweet potato puree till it is smooth and soft.


  1.   In a large bowl, well mix the eggs, water, oil, and cake mix until smooth.

  1.   Preheat oven to 350°F. Prepare 2 muffin tins with 24 cupcakes paper. Pour about 1/3 to 1/2 full of each. Bake for 20 minutes or until stick a toothpick in the cake without any batter on the pick when pulling out.


  1.   Cool the cupcakes completely before piping frosting. Place enough sweet potatoes puree into a piping bag and pipe the sweet potato frosting on the mini cakes. (I would not pipe all of the cakes at once. Just the amount I’m going to serve.)

  1.   Preheat oven to 350°F. Garnish the cupcakes with pecans and mini marshmallows. Bake for 5 minutes or till the marshmallows turn golden, then ready to serve.






  • 地瓜 4-5 條
  • 黑糖 1/2 杯
  • 無鹽奶油 1 大匙
  • 鮮奶油 2 大匙
  • 肉桂粉 1 小匙
  • 肉豆蔻粉 1/2 小匙
  • 鹽 1 小搓
  • 香草口味(或原味)蛋糕粉 1 盒
  • 3 顆全蛋
  • 水 1 杯
  • 蔬菜油 1/2 杯
  • 胡桃粒和迷你棉花糖,適量裝飾用


  1.   將地瓜去皮蒸熟或烤熟,趁熱壓碎拌勻奶油、鮮奶油、糖、香料與鹽,仔細攪拌到細緻綿軟無大顆粒

  2.   將蛋、水、油全部攪拌均勻,再均勻拌入蛋糕粉

  3.   預熱烤箱 350°F。準備兩個馬芬烤盤與杯子蛋糕模紙,舀入 1/3 至 1/2 滿到每個烤模中,烤 20 分鐘,或直到叉入牙籤拿出的時候不會沾黏蛋糕糊就是熟了,放涼備用。


  1.   要吃的時候用一個擠花袋擠上適量的地瓜泥到完全放涼的杯子蛋糕上。上面用胡桃粒與棉花糖裝飾,用小烤箱或一般烤箱烤 3-5 分鐘,或到棉花糖表面金黃,就可以享用囉!! (一次不用做太多,分開保存地瓜泥與小蛋糕比較好收藏,要吃的時候再組合一下,現烤溫溫的比較好吃喔!! )
