Thai Green Curry Chicken 泰式綠咖哩雞

For people who love spicy food, this will be a dish you will be addicted to!!! Very aromatic and full of spices, the Thai green curry is a great match with all kinds of vegetables. All you need is the green curry paste, fish sauce, and coconut milk. All other ingredients can be substitute with any meat or vegetables you like.


Servings: 5      Total Time: 40 mins       Difficulty: easy


  • Boneless chicken thigh 5-6 pieces chopped
  • 2 Onion finely sliced
  • 3 small carrots sliced
  • Garlic 5-7 cloves diced
  • 1 Shallot sliced
  • 10 Thai eggplants chopped
  • Shimeji mushrooms 1 cup
  • Lime leaves 2-3
  • Basil leaves 1 1/2 cup
  • Green curry paste 3 tbsp
  • Coconut milk 1 can
  • Fish sauce 3 tbsp


  1. Stir fried garlic, shallots, carrots in a deep pot in high heat. Stir in onions and fried till it is soft.
  2. Place all the meat and keep stir fried till the meat is slightly cooked outside.


  1.  Mix in the green curry paste and then the coconut milk. Taste the sauce before you adjust the saltiness with fish sauce.

  2.  Put the lime leaves, mushrooms, and eggplants. Then let it simmer for 15 – 20 mins. Finally stir in the basil leaves. Then ready to serve!!


The sauce would go well with any rice, noodles, or bread. Don’t add too much paste or it will be too spicy. If your curry is too spicy, try to add half cup of milk or heavy cream to balance the spiciness.

Since I add a lot of onion and vegetables in this dish, the natural sweetness from the vegetables is enough for me. If you like yours sweeter, you can always add a little sugar in your curry. The sauce is definitely a rice killer, be careful!!!

泰式綠咖哩雞 (辣)


  • 無骨雞腿排 5-6 塊,切塊
  • 2 顆洋蔥 切絲
  • 3 棵小紅蘿蔔 斜切片
  • 大蒜 5-7 粒 切末
  • 1 顆紅蔥頭 切絲
  • 10 顆泰式小圓茄 切塊
  • 鴻禧菇 1  杯
  • 檸檬葉 2-3 片
  • 九層塔葉 1 1/2 杯
  • 綠咖哩醬 3 大匙
  • 椰奶 1 罐
  • 魚露 3 大匙


  1. 深鍋大火爆香蒜頭、紅蔥頭、紅蘿蔔片,下洋蔥炒軟出水
  2. 炒入肉塊到稍微變色
  3. 均勻拌炒入綠咖哩醬,倒入椰奶。嚐一下味道,再適量加入魚路調整鹹度
  4. 加入檸檬葉、鴻禧菇、小圓茄,再煮約 15 – 20 分鐘,最後拌入九層塔葉,就可以上桌囉!!

香辣下飯的綠咖哩汁配飯、拌麵、或是拿來沾麵包都是不錯的選擇!! 裡面的材料也可以隨意替換成自己喜歡的肉類或蔬菜,都好吃唷!!
